Duck Breast

Duck Breast

 

Ingredients:

Duck Breast (filleted off the breast bone)

Seasoned Salt

Pepper

Garlic Powder

Onion Powder

Jalapeno Peppers (Fresh or pickled-sliced)

Bacon slices

Round toothpicks

 

 

Directions:

 

1. Clean and pat dry the breast fillets

2. Make an incision lengthwise in the breast -along the thick side

3. Stuff with jalapeno peppers.

4. Season to taste with above listed spices

5. Wrap with bacon slice, insert toothpick to hold together, and grill over medium heat, being careful not to scorch.

6. Serve!

 

Additional Comments:

The above recipe can be used with any meat, but works best with dark meat-Sharptail grouse, waterfowl, and Prairie Chicken
